Flavor profileEach scale is our tasting-room read on where this bottle sits between two extremes — dry to sweet, light to full-bodied, soft to acidic, and subtle to aromatic. These are subjective, however, and will shift with food, serveware & temp.
Dry
SweetBone dry: crisp and clean, almost no perceptible sweetness. Everyone will read "5" as dry.
Light
FullLight: lean and easy, mellow, has enough flavor and umami to give it character but generally really easy to drink. This is the most common weight for junmai ginjo/ginjo sake.
Soft
AcidicAbove-average acidity, an important part of this sake's character, but nowhere near sour/tart. Lift, refreshing. When paired with higher sweetness, it creates a juicy, ripe impression.
Subtle
AromaticModerate aroma: noticeable from the glass. Most often, moderate intensity aromas are either ginjo-ka (fruit, florals) or koshu-ka (nuts, mushroom, brown sugar).

The wonderful delights of Shizen no Manma (nama, raw) now in pasteurized form thanks to a collaboration between Patagonia Provisions and Terada Honke in Chiba. We're also thrilled that this particular sake is priced at a much lower markup than the Zev Rovine nama imports, at only $33/720ml versus $49 for the nama version (1570 yen vs 1870 yen in Japan, so you can clearly see that this price differential is part due to nama, but mostly due to upcharges applied by the different importers).
