A great honjozo or futsushu should be affordable, versatile, and suited for everyday: like a really good table wine or lager.
What honjozo and futsushu have in common, is that high proof distilled alcohol is added at the very end of the brewing process. With honjozo the amount is controlled, with futsushu it's not, but you'll only find good futsushu with minimal added alcohol here in Sunflower. The sake is then diluted with water back to a moderate 15-16% ABV.
The style is easy-drinking, refreshing and crisp, with a unique aromatic lift. For most sake brewers, the honjozo is their pride and joy: what they personally drink at home! A great daiginjo is one thing, but a great honjozo or futsuushu is something to really be proud of. It will be the mainstay in your customers' refrigerators, year round.
