Junmai Daiginjo and Daiginjo (hereafter JDG/DG) is the cream of the crop in terms of ingredient cost, precision handcrafting, and technical difficulty, widely considered to be the highest expression of a toji's skill. As a result, top JDG/DG is the most expensive sake you'll find on the market. Not even koshu, aged 30 or 40 years, exceeds the price tag of some junmai daiginjo!
Prestige aside, JDG/DG tend to be the most elegant, precise, and smooth sake from a given brewery. Often, but not always, aromatic, the texture and mouthfeel are the strongest point of distinction, carrying a perfect balance of sweetness, acidity, and umami. JDG/DG are celebratory and contemplative sake, enjoyed on special occasions (or simply because you love them)!
