Houou Biden Asahimai Junmai Daiginjo
As with many of the cult status heirloom varieties, Okayama native Asahimai is a notoriously difficult rice to cultivate- the grains shake loose easily and the stalks are prone to lodging. Though its revered by sake brewers and sushi chefs alike for its texture and flavor, fewer and fewer farmers are willing to work with it. Thankfully, there are some who still take pains to produce it.
Medium bodied and beautifully round with a slight viscosity. Notes of wildflower honey, sweet tea, and muscat.
