    Bottles I'm winding down in order to bring in something new, last bottles, releases from previous seasons, and overstock. 

    I will not sell sake that isn't delicious: if I have any hesitation about the quality of the bottle, if there's any chance it's "past its prime," I'll open a bottle in the shop to taste and confirm its condition. Typically, past-season sake are just as delicious (in many cases, better!) as they were on release, but have to be sold in order to make room for new releases.

    Even for unpasteurized namazake I personally prefer a bit of maturity-- the bright, brash, youthful astringency of a fresh release can be a bit intense-- so if you feel the same way, consider perusing the sale section for something more to your liking.
