    Natsuzake (the compounded form of natsu-sake) is Summer sake: a modern invention dating from ~2007, when it was invented as a marketing initiative to improve lagging sake sales in Summer. While other seasonal sake arises from kanzukuri, the ~400 year old tradition of Winter brewing (fresh sake in Winter-Spring, lightly aged sake in Fall, further aged sake in Winter) natsuzake is entirely by design. Breweries get to creatively interpret the feelings and flavors of Summer, giving their own take on the theme. As a result, the styles can be quite varied and personal! Fruity and juicy, light and refreshing, spritzy and sparkling... straight, on the rocks, highball, or even warmed as natsukan.
