Made with Omachi rice and matured at low temperature for more than six months, this seasonal Hiyaoroshi expresses the rice’s generous depth with Ohmine’s signature clarity. Delicate floral and honeyed aromas lead into notes of ripe stone fruit. The palate is smooth and gently viscous, layering concentrated fruit, rounded sweetness, and savory umami before a clean, mineral-driven finish. Pair with miso-glazed black cod, grilled pork, roasted mushrooms, or richly seasoned autumn vegetables.

Released for the autumn season, Ohmine 3 Grain Hiyaoroshi Omachi is brewed with Omachi rice polished to 50% and matured at low temperature for more than six months. This resting period rounds the sake’s texture while preserving Ohmine’s signature purity and balance, allowing Omachi’s expressive sweetness and deep umami to unfold with composed complexity. Best enjoyed chilled in a wine glass.
