Fukucho Seaside Sparkling
A citrusy, fizzy sparkling sake that has more in common with salty, Greek sparkling whites than with other sake.
"Seaside"-- labeled "Seafood" in Japan-- is an ode to the Akitsu, Hiroshima coastline, which raises some of Japan's best seafood, particularly oysters. The white koji used in crafting this brew contributes citric acid (like a squeeze of lemon) which shoots great seafood into an even greater stratosphere. Notes of white blossom, pomelo, white grapefruit, kombu, and mochi bring it all around.
