Kaze no Mori Tsuyuhakaze "Pink Label 507" Junmai Daiginjo Muroka Nama Genshu
Damn! So good. If you're not afraid of a touch of sweetness, you'll be duly rewarded by this 50% polish, lightly sparkling nama genshu (unpasteurized, undiluted) from the Kaze no Mori series. Made with Tsuyuhakaze rice, which many of you will know from Kaze no Mori's 807 Black Label, this is a totally different expression of the same rice. Strawberry puffs, whipped mascarpone, macerated berries-- an ethereal, fluffy lightness that is as indulgent as it is weightless.
