When I first tasted this sake it was with my good friend and mentor Namazake Paul, who was sharing with the community a nice lineup of sake he was considering for his own online shop. While I tasted a lot of really good stuff that day, this unassuming junmai really stood out to me. Everything about it was beautifully in balance: a gorgeous pillowy texture, classic aromatics, a light refreshing acidity, and a flavor profile that is interesting and tasty enough to enjoy as a sipper, and savory/subtle enough to perfectly compliment food. And then I found out it's a crazy good deal, $23 on the shelf, which to me is really astounding for this level of quality. Masumi Junmai Okuden is a fairly similar sake and also very good quality, but it's $4 more--  and I had always considered that one a really good deal (still do!)
 
To me the flavor profile of Aka is nostalgic. It's a symphony of all the breakfast cereals of my youth: wheaties, grape nuts, cheerios, kix, and raisin bran (my parents didn't let me have the sugary stuff!) I also get notes of just-ripe banana, yogurt, cottled cream, toasted nuts and almond milk.

Aka is made with 70% polish Haenuki rice in Yamagata, which is famous for its high standard of quality. 

This isn't going to knock you out of your seat, but if you're anything like me, it will be a comforting and familiar flavor profile, lovely texture and balance, tasting lovely anywhere from lightly chilled to warmed. As with all junmai, Aka is very versatile and salty, umami-driven cuisine will bring out its best side. I'd love to have this with fondue, thanksgiving leftovers, tonkotsu  ramen, fake (or real) chicken nuggets with BBQ sauce, a pulled pork sandwich, really anything savory with just a tad bit of sweetness should do the trick.
