Beautiful balance of savory notes in the form of toasted grain, rice bran, dried shiitake and fresh celery against lighthearted fruit notes of pineapple cup, pear, lime, melon and mangosteen. Acidity is quite high (for sake) and the bottle has a bit of fizz on opening, although it mellows out after a day or two. Enjoy within a week.
