Flavor profileEach scale is our tasting-room read on where this bottle sits between two extremes — dry to sweet, light to full-bodied, soft to acidic, and subtle to aromatic. These are subjective, however, and will shift with food, serveware & temp.
DrySweetBone dry: crisp and clean, almost no perceptible sweetness. Everyone will read "5" as dry.
LightFullLight: lean and easy, mellow, has enough flavor and umami to give it character but generally really easy to drink. This is the most common weight for junmai ginjo/ginjo sake.
SoftAcidicVery soft: gentle and mellow, almost no perceptible acidity. A "1" sake isn't flat or boring, but is balanced around overall subtlety and softness, using other characteristics to give it structure.
SubtleAromaticVery subtle aroma: almost no aroma, maybe a little rice, chestnut, or pear. Usually comes with a subtle flavor profile as well.

Faint notes of age on the nose-- nutmeg, rum, creme brulee-- while the palate is the platonic ideal of Niigata clarity. Ocean mist, sharp minerality, sagebrush, steamed honey chestnuts and steamed rice. The texture is soft and fuzzy like fine velour. Like the first time you drank a really good mineral water and wondered just what kind of water you'd been drinking until then.

You know, you think Niigata is a monolith until one day it clicks and the subtle nuances become clear. Midorikawa honjozo is a revelation for me. Like Matsunoi Tokubetsu Honjozo, Midorikawa has completely redefined honjozo in my eyes, rising from my least favorite style to (quite possibly) my favorite style in 2023.
