Flavor profileEach scale is our tasting-room read on where this bottle sits between two extremes — dry to sweet, light to full-bodied, soft to acidic, and subtle to aromatic. These are subjective, however, and will shift with food, serveware & temp.
Dry
SweetBone dry: crisp and clean, almost no perceptible sweetness. Everyone will read "5" as dry.
Light
FullVery light: delicate and water-clean on the palate, light in flavor and overall presence.
Soft
AcidicVery soft: gentle and mellow, almost no perceptible acidity. A "1" sake isn't flat or boring, but is balanced around overall subtlety and softness, using other characteristics to give it structure.
Subtle
AromaticSubtle aroma: if you stick your nose in, you'll get a few quiet notes of fruit, grains, nuts & rice. Aroma isn't a big part of this sake's character. An aromatically quiet sake can still have a powerful flavor, though.
Pairs with
Pairs with dried scallops, ripe strawberries, and cream cheese canapés.
Formerly known as "Wishing Well," Lone Pine is an alternate telling of the Matsunoi kanji and speaks to the pines that dot the countryside in this remote Niigata village.

Familiar, earthy notes of toasted sugar, pine cones, hazelnuts, & crisp spring water. Classic old Niigata: a cleansing, tanrei karakuchi finish paired with a nutty, clean body.

There's not a lot to say about Matsunoi, but only because it brings you to a nostalgic place of peace and silence, pine trees and deep wells of fresh snowmelt.
