Flavor profileEach scale is our tasting-room read on where this bottle sits between two extremes — dry to sweet, light to full-bodied, soft to acidic, and subtle to aromatic. These are subjective, however, and will shift with food, serveware & temp.
DrySweetBalanced dry: reads as dry, with a little bit of softness, or maybe a fruit/brown sugar note that tempers the impression of dryness. Most people will read "2" as dry.
LightFullVery light: delicate and water-clean on the palate, light in flavor and overall presence.
SoftAcidicAbove-average acidity, an important part of this sake's character, but nowhere near sour/tart. Lift, refreshing. When paired with higher sweetness, it creates a juicy, ripe impression.
SubtleAromaticVery subtle aroma: almost no aroma, maybe a little rice, chestnut, or pear. Usually comes with a subtle flavor profile as well.
Pairs with
Yukikage is light and easygoing, a great choice for a simple glass pour on its own or with just about any fresh-tasting cuisine. Crab canapes with yuzu kosho, silken tofu hiyayakko, cold soba noodles, chicken breast yakitori with fresh-grated wasabi, crudites and dip, and hiyashi chukka!

Yukikage is clean and crisp, effortlessly evoking an alpine waterfall or high elevation meadow dotted with sweet-smelling wildflowers. This low-volume, pure prettiness-- Japanese tasting notes sometimes call it "gorgeousness"--is a seriously good deal at $26/btl and one of my top recommendations for parties, weddings, and big groups.

Lightly spiced with notes of fresh nutmeg and chestnut, soft poached pear, green apple flesh, and fresh white mushroom, finishing super clean.
