Long loved as a humble cup sake, Amabuki Ichigo is a gorgeous, premium brew unto itself: bright, tart, complex, with a distant tropical tones intermingled with refreshing bitter seville orange and soft green herbs. It's different from the pasteurized, cup sake version in showing more of the wild herbal notes of Omachi and grippy, tannin-like texture that makes me imagine a persimmon slice topped with persimmon jam.
