Dry
SweetBalanced dry: reads as dry, with a little bit of softness, or maybe a fruit/brown sugar note that tempers the impression of dryness. Most people will read "2" as dry.
Light
FullLight: lean and easy, mellow, has enough flavor and umami to give it character but generally really easy to drink. This is the most common weight for junmai ginjo/ginjo sake.
Soft
AcidicAbove-average acidity, an important part of this sake's character, but nowhere near sour/tart. Lift, refreshing. When paired with higher sweetness, it creates a juicy, ripe impression.
Subtle
AromaticAromatic: aroma is a big part of this sake's character and design. Perfume fills the glass. Usually "4" aroma is coming from ginjo-ka (fruit, florals).

A delightful, light and refreshing modernist junmai ginjo from a region usually known for its powerful umami and big juicy flavors. Notes of passionfruit, custard, caramelized pineapple, mamey, spearmint and laundry sheets!

Acidity is on the high side at M+, a touch grassy when first opened but it dissipates after a few days. Finish lingers, but it doesn't rely on "bigness" to deliver this longevity...just great craftsmanship. On the finish I get that fine, Japanese wagashi sugar sweetness and a little starchiness too. Crisp and wonderful. Enjoy now, because the toji is changing-- and it may never be quite the same!
