DrySweetBone dry: crisp and clean, almost no perceptible sweetness. Everyone will read "5" as dry.
LightFullMedium: a bit of richness or creaminess, heft, more flavor intensity, more presence, sometimes higher alcohol or sweetness. A lot of namazake sits here.
SoftAcidicVery soft: gentle and mellow, almost no perceptible acidity. A "1" sake isn't flat or boring, but is balanced around overall subtlety and softness, using other characteristics to give it structure.
SubtleAromaticSubtle aroma: if you stick your nose in, you'll get a few quiet notes of fruit, grains, nuts & rice. Aroma isn't a big part of this sake's character. An aromatically quiet sake can still have a powerful flavor, though.
Pairs with
Great with salmon roe, caviar or cocktail canapes. Cuts right through the rich flavor of fish like toro and hamachi at the sushi bar. Keep refrigerated after purchase and serve ice-cold-- a martini glass wouldn't hurt either.
A martini-lover’s sake: dry and clear with aromatics reminiscent of Tanqueray. No other ginjo combines dryness (+12 on the sake scale) and edginess (36 proof) to such exhilarating effect.
It has a gentle and fresh mountain breeze kind of scent, light herbals, ouzo, a collection of alpine smells you might imagine are wafting from the basket of Julie Andrews as Maria von Trapp in The Sound of Music. The palate is full and creamy, deep and long, with a nice line of acidity and mineral giving it an icy-crisp structure.
