The nama version is of course fully unpasteurized, and has slightly higher acidity + a zestier, fresh mandarin peel kinda profile.
Den "Blanc" is so named after the use of white koji mold instead of the usual yellow koji mold: a mutation that produces high quantities of acidity, especially citric acid, and is most often used in shochu brewing rather than sake. In Blanc, this gives the sake its unusual mandarin orange flavor notes and bright, satisfying acidity.
