Elegant, with a touch of tropical sweetness, Nabeshima's New Moon shiboritate nama genshu (fresh pressed unpasteurized, undiluted sake) is at once elegant and powerful, loaded with presence, generous in its sencha-like umami. Unusually deep, round, orangey fruit notes make up its profile, for those who love their boisterous, expressive junmai ginjo nama genshu's.

Fukuchiyo Shuzo was founded in 1923 and is located in the Ariake Sea facing town of Kashima in Saga prefecture. Gearing up for the brewery's 100th anniversary, the original merchant house has recently been renovated into luxury auberge, and the original milling room into a private tasting room.
The brewery recommends with bright, early spring fare- Mediterranean dishes featuring olive oil, fresh herbs, and citrus, especially. But I think the word is natural sweetness + delicate umami, like you'd find in sweet raw shrimp, langoustine, scallop and lobster. This number could stand up to sukiyaki, but I'd put it to the test with Peruvian ceviche amarillo.
