Classic Niigata. Waterlike, ricey, clean, and dry, with a bit of chestnut and spice notes from the rice and koji and a slightly velvety mouthfeel. A lovely ginjo using locally-sourced Gohyakumangoku rice and brewed by the skilled hands of Kubota. The company goes to great lengths to improve the local environment and culture, even partnering with Snow Peak to produce sake for the Niigata-based outdoor company.

Established in 1830 with the motto of "quality first". Brewing sake is making rice. Not only do they focus on obtaining high quality sake rice, they dedicate time and effort in their labs to increase said rice's quality. Their efforts do not stop there however - in order to help preserve the environment, they implement the ISO14000 system of environmental sustainability, and also participate in various activities to preserve their natural surroundings. Additionally, they hold tea ceremonies, concerts, and cultural events for the local community. The goal is to make a fun, sustainable, and ultimately enjoyable environment with sake.

飲みやすい (nomiyasui) can sometimes be tricky to properly convey. What does a sake that's "easy to drink" mean to the native English speaking drinker? Probably not much. But Senjyu is truly the epitome of nomiyasui- elegant yet easy, near impossible to tire of or pair poorly. The brewery's aim was to make a sake that will elevate any meal, and they've succeeded here! -Molly
