Velvety-textured, smooth aged yamahai made with local Gohyakumangoku rice from this gem of a small brewery in Shimane. Dry but not sharp, the aging has delivered layers of nutty, toasted flavor and softened its hard edges. I get comforting notes of toasted Scottish oats with brown butter, maple and candycap mushroom. But really, I think this sake is all about the texture and mouthfeel...really exceptional, particularly room temp and warmed. I'd love to enjoy this with some tare-grilled eel.

Tamazakura Sake Brewery was founded in 1892. Currently, the brewery is run by two brothers, Shohei & Keiji Sakurao. The Sakurao brothers love to eat and drink, so they brew sake designed to be enjoyed with food.
Located in the Mizuho area, Onan Town, Shimane Prefecture, a small town with a population of 9,500. The area around the brewery is rich in nature and has an abundance of clean, spring water nurtured by the mountains.
Set at an altitude of 360m with a large diurnal range, Mizuho is an ideal environment for rice cultivation. Most of the rice used for Tamazakura is grown by contracted farmers around the brewery.
