At once earthy, rustic, elegant and fruity. This expertly crafted daiginjo shows notes of ultra-ripe peach and roasted sage in the finish, closely reflecting the Cabin in the Snow style but with a very evident upgrade in elegance and smoothness.

Background:
Founded in 1903, the Saiya Brewery is one of the most award-winning breweries at the Japanese National Sake Competition. Located in the snowy region of Akita, in the past fifteen years of the competition, the brewery has won an astonishing ten gold medals. Mr. Takahashi, their brewmaster, has been recognized by the Emperor of Japan as a cherished craftsman and is one of the most highly esteemed in Japan, being a core influence of the Sanno Toji Guild in southern Akita.
This Junmai Daiginjo is super-layered, elegant, and deep, made with a combination of locally grown Akita Sake Komachi rice and top class Yamada Nishiki rice from Hyogo. In keeping with Saiya’s house standards, this Junmai Daiginjo is also genshu, muroka and features their proprietary yeast.
