Naginata is made in small batches of approximately 1800 bottles at a time from Yamadanishiki rice grown in Arkansas at Isbell Farms. It is produced/release approximately twice a year and is the toji's most complex, difficult brew. In an interview, he told me: "It takes all of my skill to produce this sake."
