Vanilla and banana coax you in, then dense and chewy, satisfying, fleshy notes of melon, melon pan, melon custard, and fine mochi-wrapped fruit wagashi create a symphony of flavors. We are decidedly NOT talking high-toned fruity florals like Dassai or most daiginjo, but something more real, umami-driven, nuanced and multifaceted: a junmai daiginjo for people who don't usually like junmai daiginjo (aka, myself).
Long finish, creamy, satisfying, smooth but strong, I feel like this would be gorgeous warm too. It has a sturdy, self- assured quality and lots of ricey depth.
From the importer: "Typically, Fukuro shibori is a technique reserved for delicate high-end daiginjo sakes. The mash is poured into small mesh canvas bags one by one and the liquid is allowed to slowly drip out over 2-3 days, with gravity as the only force, no pressure applied. The result is a sake with smoother texture and a more delicate profile. It is interesting to see it used for Okuharima, which is a brand that generally profiles bigger, richer and more rice-forward. But its application here is something quite remarkable. Yamauchi-san is able to produce complex and bold sake, but with a finesse and elegance that sets it apart from the rest of the portfolio."
