Flavor profileEach scale is our tasting-room read on where this bottle sits between two extremes — dry to sweet, light to full-bodied, soft to acidic, and subtle to aromatic. These are subjective, however, and will shift with food, serveware & temp.
DrySweetBalanced: a bit of fleshy sweetness. Fruit notes taste more round and juicy, chocolate notes have more heft. Typical sweetness for modern styles. Some people will read "3" as dry.
LightFullFull: rich and mouth-coating, lots of presence and intensity, usually higher in sweetness, alcohol, age, and/or umami. A powerful sake you can't help but notice.
SoftAcidicAbove-average acidity, an important part of this sake's character, but nowhere near sour/tart. Lift, refreshing. When paired with higher sweetness, it creates a juicy, ripe impression.
SubtleAromaticSubtle aroma: if you stick your nose in, you'll get a few quiet notes of fruit, grains, nuts & rice. Aroma isn't a big part of this sake's character. An aromatically quiet sake can still have a powerful flavor, though.

From the brewer: This is an ancient style of nigori (cloudy) sake that’s 100% unfiltered and retains some chunkiness of the fermented rice. Doburoku is an ancient alcoholic drink that is illegal for home-brewing in Japan and limited to be produced by only a handful of breweries. The sake you drink nowadays that has been clarified are modern styles possible due to technology. Rice farmers long ago did not have the technology or the tools to be able to clarify sake so they would ferment rice and just drink the mash straight up. This is the rawest form of sake, a piece of history we introduce in a modern way in our own style.
