DrySweetBalanced: a bit of fleshy sweetness. Fruit notes taste more round and juicy, chocolate notes have more heft. Typical sweetness for modern styles. Some people will read "3" as dry.
LightFullFull: rich and mouth-coating, lots of presence and intensity, usually higher in sweetness, alcohol, age, and/or umami. A powerful sake you can't help but notice.
SoftAcidicAbove-average acidity, an important part of this sake's character, but nowhere near sour/tart. Lift, refreshing. When paired with higher sweetness, it creates a juicy, ripe impression.
SubtleAromaticSubtle aroma: if you stick your nose in, you'll get a few quiet notes of fruit, grains, nuts & rice. Aroma isn't a big part of this sake's character. An aromatically quiet sake can still have a powerful flavor, though.

Master brewer James Jin has a side hobby of gardening and Bonsai and the name and the label design reflects his appreciation in the art of Bonsai. He sees a natural connection with brewing and bonsai - two crafts shaped by patience, intuition and guiding natural phenomena. Using natural ingredients to bring out unique characters that reflect the brewer’s intentions.
The art is of Japanese black pine (Kuromatsu 黒松) in Cascade style - where the tree grows downward below the base of the pot.
