Flavor profileEach scale is our tasting-room read on where this bottle sits between two extremes — dry to sweet, light to full-bodied, soft to acidic, and subtle to aromatic. These are subjective, however, and will shift with food, serveware & temp.
DrySweetBalanced: a bit of fleshy sweetness. Fruit notes taste more round and juicy, chocolate notes have more heft. Typical sweetness for modern styles. Some people will read "3" as dry.
LightFullMedium: a bit of richness or creaminess, heft, more flavor intensity, more presence, sometimes higher alcohol or sweetness. A lot of namazake sits here.
SoftAcidicSoft: the most common degree of acidity for sake. A little bit of acidity to give it structure and keep the flavor refreshing, but acidity isn't an important part of its identity.
SubtleAromaticModerate aroma: noticeable from the glass. Most often, moderate intensity aromas are either ginjo-ka (fruit, florals) or koshu-ka (nuts, mushroom, brown sugar).

Okayama is famous for its peaches, and this sake uses yeast derived from momo white peach skins, as well as other brewing techniques to accentuate peach notes. The dense, juicy mellow sweetness (umakuchi refers to an umami-rich flavor) is contrasted by brisk olive brine backnotes and a bit of ricey earthiness. This is a single pasteurized sake matured over Summer for gentle maillard notes of carmelized sugar and grilled peaches.

I love the use of Akebono here-- it's the unsung hero of Okayama, always in the shadow of the more famous and geeky Omachi, but no less delicious. It shares the velvety density of Omachi but without the intense rose/herb notes.
