Flavor profileEach scale is our tasting-room read on where this bottle sits between two extremes — dry to sweet, light to full-bodied, soft to acidic, and subtle to aromatic. These are subjective, however, and will shift with food, serveware & temp.
DrySweetBalanced dry: reads as dry, with a little bit of softness, or maybe a fruit/brown sugar note that tempers the impression of dryness. Most people will read "2" as dry.
LightFullLight: lean and easy, mellow, has enough flavor and umami to give it character but generally really easy to drink. This is the most common weight for junmai ginjo/ginjo sake.
SoftAcidicAbove-average acidity, an important part of this sake's character, but nowhere near sour/tart. Lift, refreshing. When paired with higher sweetness, it creates a juicy, ripe impression.
SubtleAromaticSubtle aroma: if you stick your nose in, you'll get a few quiet notes of fruit, grains, nuts & rice. Aroma isn't a big part of this sake's character. An aromatically quiet sake can still have a powerful flavor, though.

“Unbridled” is a kimoto sake brewed with wild yeast and a touch of yuzu zest.

We used Calhikari rice grown in Sacramento using Natural Agriculture (自然農法), a farming method developed in Japan that respects the natural power of the soil. No pesticides or fertilizers are used. With rice so full of nature’s energy, we wanted to leave as much of it intact as possible. We kept the polishing ratio at 90%, removing only 10% of each grain — about the same as the rice we eat.

The yuzu was grown organically in the mountains of Willits, Mendocino County. We used only the zest, and we think it pairs beautifully with the tartness created by the wild lactic acid bacteria native to our brewery.

Fermentation began before Yoshi had any idea what kind of wild yeast had found its way into the brew, or what personality it might have. It took a path far beyond anything Yoshi had imagined, becoming a drink that could only have been born here, in this little corner of California.
