Chiyo Shinomine Vert Junmai Ginjo
Classic shinomine. The palate begins with a very sharp acidic/CO2 prickle the moment you taste, leading into a dry and relatively light mid-palate…grassy, herby, plantain, a bit of astringency. Beneath there's a salty, mineral quality. There's more sweetness here than in other Chiyo brews, but it’s hidden behind the sharp angle of the sake's substantial acidity-CO2 structure, offering remarkable balance around a very unique flavor profile.
From the importer: "One of Chiyo Shuzo's rice paddy series, Vert is made with local Nara prefecture-grown Kamenoo rice. Kamenoo, sometimes referred to as a "phantom rice" (maboroshi no okome) is a very old strain of rice that nearly went extinct but was revived and is starting to gain popularity with sake brewers. It is a challenging rice to work with, but it is rewarding as it produces sake with layered complexity and umami. Vert has a bit of nuttiness and an almost oily quality, but is flawlessly balanced. "
