The nose gives tart yogurt off the bat-- tart froyo, a little blueberry. The palate backs this up with a gorgeous textural lift from the delicate natural fizz. Notes of tart yogurt, blueberry and huckleberry, as well as soft green herbs: sweet cicely, a little mike n ike, bay laurel, anise candies. -Nina

On the nose: cut herb stems, freshly turned soil, cool wet stone plucked from a stream. Light weight, grippy, astringent, acidity like salty lemon drops (altoids sours?) Turns mellow and creamy as the temperature rises, syncing well with a good, homemade aioli. Great lunch accompaniment to sprat toast with parsley, mayo, pickled onion. -Molly

From the importer: "Azur is part of the Shinomine sub-brand, and this is the Rice Paddy series.  What makes this series unique is that it uses rice grown only in Nara prefecture. For the rest of Shinomine, the Aiyama, Omachi, etc, is sourced from all over, but this series uses only rice grown locally by their contracted farmers.  Azur is made with white koji, which gives it a pronounced tartness due to the higher levels of citric acid produced by the white koji."
