Creamy melon soda but punctuated by Chiyo Shuzo's signature sharp acidic prickle of brightness. There’s a little funk after that— a deep very slightly sulfury, kinda fermented melon thing-- as well as top notes of fresh Japanese muskmelon. The palate is lighter and crisper than the nose would suggest. This is a veggie pairing sake, no doubt. “fresh grassy notes light refreshing finish--” yes indeed! -Nina

From the importer: "This is the flagship brand, the same as the popular Chokara and Yamahai Omachi 666, using rice from around Japan. Here, the notoriously difficult to source Aiyama rice is used, lending a very unique character.  It has subtle umami, unlike the pronounced savoriness of the Kimoto and Yamahai, and it has a bit more sweetness than Chokara, with a very fresh, grassy quality."
