‘Heart to Heart’ (Kokoro Karaseyo 心からせよ is the Japanese name-- something akin to "with your whole heart") is the motto of a local elementary school celebrating its 150th anniversary. It reminds us to approach everything: sake brewing, work, relationships, and life with sincerity and full commitment. This sake is a refined expression of Shibata’s ultra-soft water. Rather than forcing fermentation to achieve extreme dryness, the brewery reimagined its approach to create a more balanced style that highlights softness and clarity.
