Dry but fuller, steady and sturdy, rich without being chocolatey, dry without being brisk, grassy, or sharp. Solidly grain-driven, with expanding notes of rye, buckwheat and barley, lots of koji flavor too and a little walnut astringency on the finish. A very ojisan sort of sake-- I love it.

From the importer: "The brewery that makes Okuharima, Shimomura Shuzo, is brand new to the US.  It was a well regarded brewery in Japan, but when a young Toji named Kunihiro Yamauchi left his former brewery to take over at Shimomura only a few years ago, their sake gained a deeper level of complexity and acclaim. Hojun means "rich" and Karakuchi means "dry", so the aim of this sake is to produce deep, rich and savory notes, but the finish is sharp and dry."
