Flavor profileEach scale is our tasting-room read on where this bottle sits between two extremes — dry to sweet, light to full-bodied, soft to acidic, and subtle to aromatic. These are subjective, however, and will shift with food, serveware & temp.
DrySweetBalanced: a bit of fleshy sweetness. Fruit notes taste more round and juicy, chocolate notes have more heft. Typical sweetness for modern styles. Some people will read "3" as dry.
LightFullMedium: a bit of richness or creaminess, heft, more flavor intensity, more presence, sometimes higher alcohol or sweetness. A lot of namazake sits here.
SoftAcidicSoft: the most common degree of acidity for sake. A little bit of acidity to give it structure and keep the flavor refreshing, but acidity isn't an important part of its identity.
SubtleAromaticModerate aroma: noticeable from the glass. Most often, moderate intensity aromas are either ginjo-ka (fruit, florals) or koshu-ka (nuts, mushroom, brown sugar).
Pairs with
Japan's Autumn hits like grilled saury, oden, or dengaku (tofu, eggplant, anything really). I can also see the sweet 'n' savory boldness of this complementing Korean fried chicken, tteokbokki, and rich South Asian curries.

Nanawarai makes "umakuchi" sake, which is suprisingly not a word I find translated into the English speaking sake world too often despite its prevalence. In the context of sake, it implies a sweetness balanced by an impactful savoriness and richness. I can't think of a better word for this hiyaoroshi. The nose is a ginjo-y fruit basket- juicy pears, apples, tinned pineapple and honeysuckle- but opens up to a flavor impact that is in turns grassy as matcha and sweet and silly as Dubble Bubble.

Brewed in Nagano's Kiso valley, a short drive from beloved Sunflower seasonal staple Yukawa Brewery (Kisoji). For this seasonal release, the brewers chose to contrast locally grown Miyama Nishiki's plush and rounded character with tropical and bright Hiroshima yeast.
