Flavor profileEach scale is our tasting-room read on where this bottle sits between two extremes — dry to sweet, light to full-bodied, soft to acidic, and subtle to aromatic. These are subjective, however, and will shift with food, serveware & temp.
DrySweetBalanced: a bit of fleshy sweetness. Fruit notes taste more round and juicy, chocolate notes have more heft. Typical sweetness for modern styles. Some people will read "3" as dry.
LightFullMedium: a bit of richness or creaminess, heft, more flavor intensity, more presence, sometimes higher alcohol or sweetness. A lot of namazake sits here.
SoftAcidicSoft: the most common degree of acidity for sake. A little bit of acidity to give it structure and keep the flavor refreshing, but acidity isn't an important part of its identity.
SubtleAromaticModerate aroma: noticeable from the glass. Most often, moderate intensity aromas are either ginjo-ka (fruit, florals) or koshu-ka (nuts, mushroom, brown sugar).
Pairs with
Pair with equally robust foods (I love a little semi-firm sheep or goat's milk cheese like the French Ardi Gasna, fennel pollen & pepper- dusted pork chops or porchetta, or generously herbed pomelo salad with olive oil) and you'll be on cloud nine.

The first sake of Masumi's brewing season! Fresh and punchy with sweet and tangy fruit elements and a clean, crisp finish. Has the undiluted strength to pair with rich foods like miso-marinated fish, dark meat stews, and pasta with heavy cream or cheese sauces, but also has the fresh acidity to go with citrus salads or ceviche. Practically exploding with flavour, “Arabashiri” pairs well with non-Japanese foods too, especially island and South American cuisine!

Tasting notes:

A fresh palate of charentais melon, cucumber, vanilla froyo, & a shimmering twang of acidity make this sake one of the great joys of Spring.
