Flavor profileEach scale is our tasting-room read on where this bottle sits between two extremes — dry to sweet, light to full-bodied, soft to acidic, and subtle to aromatic. These are subjective, however, and will shift with food, serveware & temp.
Dry
SweetBalanced: a bit of fleshy sweetness. Fruit notes taste more round and juicy, chocolate notes have more heft. Typical sweetness for modern styles. Some people will read "3" as dry.
Light
FullMedium: a bit of richness or creaminess, heft, more flavor intensity, more presence, sometimes higher alcohol or sweetness. A lot of namazake sits here.
Soft
AcidicSoft: the most common degree of acidity for sake. A little bit of acidity to give it structure and keep the flavor refreshing, but acidity isn't an important part of its identity.
Subtle
AromaticModerate aroma: noticeable from the glass. Most often, moderate intensity aromas are either ginjo-ka (fruit, florals) or koshu-ka (nuts, mushroom, brown sugar).
Pairs with
From our Spring 2024 club write up: "I found an excellent pairing in Cuban food: fried plantains, black beans, plenty of lime, chopped up mango and avocado, fresh herbs...a little guayaba y queso app....whatever you do, head to the islands with this one.

90 Pink returns to the States for another year! Last year we saw a very limited allotment that was widely adored by our club members.

This is the Spring release from Hara Shuzo's seasonal series highlighting the flavor of table rice exclusively grown in Niigata. The cultivation of higher acidity, moderate sweetness, full body and bright effervescence from fermentation, allows a study in contrasts: depth and fruity concentration vs. freshness and bubbly levity!

Notes of pineapple, juicy watermelon, strawberry cheesecake, mochi, yoplait yogurt, and Dubble Bubble.
