A soft and unpretentious little junmai we chose to classify as "grandma sake": not blue-collar dad sake per se, but a little softer, with quiet florals and a nostalgic, nourishing quality, still sturdy and forthright but at the same time delicate and pretty. An excellent value capital-J junmai from a richly historic (est. 1550!) brewery in old Itami, the first sake boom town of the early modern period. This is not modern sake (fruity, sweet, acidic and juicy) by any measure, you'd never find it in a Ginza sake bar. But you would find it in a precious 6-seat izakaya run by a veteran mama-san with good taste.
