Dry
SweetBalanced: a bit of fleshy sweetness. Fruit notes taste more round and juicy, chocolate notes have more heft. Typical sweetness for modern styles. Some people will read "3" as dry.
Light
FullVery light: delicate and water-clean on the palate, light in flavor and overall presence.
Soft
AcidicVery acidic: sharp and tangy. Might be sparkling, contain citrus, have a high koji content, or utilize natural brewing methods that produce lots of lactic or acetic acid.

Crafted from Kirinzan Classic futsushu made with 100% locally grown rice from their tiny mountain town of Oku-aga, Niigata, largely farmed by the brewers & their families. After fermentation, the sake is pressed then pasteurized and aged in tanks for over six months to mellow. Before bottling, it's gently diluted with the incredibly soft and pristine water and blended with fresh lemon juice sourced from Setouchi—an area celebrated for its vibrant citrus grown along the sunny coast of Japan’s Seto Inland Sea. This has been an izakaya favorite sake cocktail in Niigata izakayas for decades! Kirinzan just decided to embrace the tradition and bottle it for everyone to enjoy.
