Flavor profileEach scale is our tasting-room read on where this bottle sits between two extremes — dry to sweet, light to full-bodied, soft to acidic, and subtle to aromatic. These are subjective, however, and will shift with food, serveware & temp.
DrySweetBalanced: a bit of fleshy sweetness. Fruit notes taste more round and juicy, chocolate notes have more heft. Typical sweetness for modern styles. Some people will read "3" as dry.
LightFullMedium: a bit of richness or creaminess, heft, more flavor intensity, more presence, sometimes higher alcohol or sweetness. A lot of namazake sits here.
SoftAcidicSoft: the most common degree of acidity for sake. A little bit of acidity to give it structure and keep the flavor refreshing, but acidity isn't an important part of its identity.
SubtleAromaticAromatic: aroma is a big part of this sake's character and design. Perfume fills the glass. Usually "4" aroma is coming from ginjo-ka (fruit, florals).

While tasting the Winter releases I had a nice bowl of classic ahi poke for lunch, and I stopped dead in my tracks following a bite with potari-potari! I can’t recommend ahi poke (green onion, seaweed, shoyu chili marinade) enough with this sake. For the veggies: mix up a nice salad with poke marinade, cubes of firm Ota tofu, and lots of avocado. You won’t be disappointed. Wow!

Vibrant fresh nose with tropical notes of guava, papaya, strawberry and tangerine with an off-dry, smooth, candied hazelnut finish. Jamie Graves made a perfect comparison: this is the Japanese cousin to a Feinherb Mosel Riesling. Laser sharp, great acid and just the right amount of juicy breadth and sweetness. This sake is juicy, aromatic, powerful, classic-- superbly well done!
