Flavor profileEach scale is our tasting-room read on where this bottle sits between two extremes — dry to sweet, light to full-bodied, soft to acidic, and subtle to aromatic. These are subjective, however, and will shift with food, serveware & temp.
Dry
SweetBalanced: a bit of fleshy sweetness. Fruit notes taste more round and juicy, chocolate notes have more heft. Typical sweetness for modern styles. Some people will read "3" as dry.
Light
FullMedium: a bit of richness or creaminess, heft, more flavor intensity, more presence, sometimes higher alcohol or sweetness. A lot of namazake sits here.
Soft
AcidicSoft: the most common degree of acidity for sake. A little bit of acidity to give it structure and keep the flavor refreshing, but acidity isn't an important part of its identity.
Subtle
AromaticSubtle aroma: if you stick your nose in, you'll get a few quiet notes of fruit, grains, nuts & rice. Aroma isn't a big part of this sake's character. An aromatically quiet sake can still have a powerful flavor, though.
Pairs with
Though a winter release with high alcohol and acidity that can match the fatty fish of the season, "Green" also feels right at home in my hand while I stand over the grill and flip yakitori skewers. Chinese cuisine (sweet and sour pork, shrimp with mayonnaise, happosai, pickled mustard greens, gyoza).

Brewed using 100% newly harvested, locally grown Niigata Gohyakumangoku rice, this is a Funaguchi experience you can only get your hands on once a year. Fruitier, brighter, crisper, and way more zippy-brain than the usual gold can. It's delicious and tastes even better when it's chilled in fresh snow.
