Flavor profileEach scale is our tasting-room read on where this bottle sits between two extremes — dry to sweet, light to full-bodied, soft to acidic, and subtle to aromatic. These are subjective, however, and will shift with food, serveware & temp.
DrySweetBalanced: a bit of fleshy sweetness. Fruit notes taste more round and juicy, chocolate notes have more heft. Typical sweetness for modern styles. Some people will read "3" as dry.
LightFullLight: lean and easy, mellow, has enough flavor and umami to give it character but generally really easy to drink. This is the most common weight for junmai ginjo/ginjo sake.
SoftAcidicAbove-average acidity, an important part of this sake's character, but nowhere near sour/tart. Lift, refreshing. When paired with higher sweetness, it creates a juicy, ripe impression.
SubtleAromaticModerate aroma: noticeable from the glass. Most often, moderate intensity aromas are either ginjo-ka (fruit, florals) or koshu-ka (nuts, mushroom, brown sugar).
Pairs with
A go to for an at-home-izakaya night. Sensation's mellow rice forward qualities sit beautifully beside Japanese flavors. New flavors are pulled out of the food and the sake when served alongside dashi based dishes like simmered yellowtail and daikon, kake udon or tamagoyaki.
Vanilla, apricot, kiwi, mandarin segments and lilies on the nose, while the palate offers beautiful tension between soft, ricey sweetness, acidity, and prominent shibumi (astringency). A well-balanced and shockingly affordable sake for all of the care Emishiki Shuzo has taken in it, and all of the awards it has received. This would be well priced at double the cost.
