With its floral nose and mellow fruity flavor, “Dewasansan” is a rewarding choice for wine drinkers new to the world of sake. It has a wholesome freshness, a green apple tartness and a refreshing finish. It's channeling the best Sauvignon Blancs, with green grass notes, pineapple, coconut yogurt, wheatgrass, passionfruit, green apple skin, pandan, peeled almonds, green almonds, lemon, cucumber, and mint. A more generous side-- cherry blossoms and peaches-- comes out after it has settled a few days open in the fridge.
“Dewasansan” is delicious with sashimi and oysters on the half-shell, and pairs perfectly with grilled tuna, sea bass and halibut. Keep under refrigeration after purchase and serve chilled.
The most delicate aromatics will fade within a week and the sake may lose a bit of balance, but it's still very enjoyable for 2-4 weeks after opening.
