Flavor profileEach scale is our tasting-room read on where this bottle sits between two extremes — dry to sweet, light to full-bodied, soft to acidic, and subtle to aromatic. These are subjective, however, and will shift with food, serveware & temp.
DrySweetBalanced: a bit of fleshy sweetness. Fruit notes taste more round and juicy, chocolate notes have more heft. Typical sweetness for modern styles. Some people will read "3" as dry.
LightFullLight: lean and easy, mellow, has enough flavor and umami to give it character but generally really easy to drink. This is the most common weight for junmai ginjo/ginjo sake.
SoftAcidicAbove-average acidity, an important part of this sake's character, but nowhere near sour/tart. Lift, refreshing. When paired with higher sweetness, it creates a juicy, ripe impression.
SubtleAromaticModerate aroma: noticeable from the glass. Most often, moderate intensity aromas are either ginjo-ka (fruit, florals) or koshu-ka (nuts, mushroom, brown sugar).
Pairs with
Vinegary seaweed salads, green bell peppers wrapped in pork belly, simmered fish with ginger & green onion, bring out its more sophisticated side.

Inspired by the image of tiny silver bubbles awash in sunlight filtered through a clear
stream, Clammbon is ethereal, complex and multi-sensory. At once light and refreshing, creamy from a bit of ricey haze and the kimoto lactic fermentation starter, with friendly notes of nashi (pear) and ramune. Umami on the finish is balanced by energetic bubbles and a touch of grippy bitterness.

In designing this product, aside from the poetic inspiration Dewatsuru wanted it to be stable for shipping and many of their decisions were informed by this goal. Akita Snow Country Yeast UT-1 was developed by the prefectural research center to convey Akita ginjo’s signature pear-strawberry-ramune aromas while also being less sensitive to temperature fluctuations. UT-1 generates as much ethyl caproate (good smell) as its parent strain, but lower caproic acid, a bitter compound which goes off if the sake isn’t handled carefully. In addition, it’s pasteurized once to prevent “hine-ka”: going off the path, a foul lactic small.
