Brewed in the Yamahai style using Masumi's own proprietary strain of Yeast #7 and local Kinmon Nishiki rice, Nanago has a mild fragrance and a full-bodied flavor with well balanced acidity and a clean finish, richness on the mid-palate, and a deep umami that synchronizes beautifully with food. Understated elegance in a glass. Opens gracefully at first sip, then a flavour sonata and an exquisite finish. Neither sweet nor dry, with a wisp of quince. One of the first sake to find its way on to a three-star Michelin tasting menu at Heston Blumenthal's The Fat Duck over 15 years ago.
