Flavor profileEach scale is our tasting-room read on where this bottle sits between two extremes — dry to sweet, light to full-bodied, soft to acidic, and subtle to aromatic. These are subjective, however, and will shift with food, serveware & temp.
Dry
SweetBalanced dry: reads as dry, with a little bit of softness, or maybe a fruit/brown sugar note that tempers the impression of dryness. Most people will read "2" as dry.
Light
FullVery light: delicate and water-clean on the palate, light in flavor and overall presence.
Soft
AcidicVery soft: gentle and mellow, almost no perceptible acidity. A "1" sake isn't flat or boring, but is balanced around overall subtlety and softness, using other characteristics to give it structure.
Subtle
AromaticVery subtle aroma: almost no aroma, maybe a little rice, chestnut, or pear. Usually comes with a subtle flavor profile as well.

From the brewery known for Yuki no Bosha, Yuri Masamune is one of the few futsushu ("regular" or table sake) on the market that offers quality on par with premium styles (such as honjozo or junmai ginjo). Saiya Shuzo uses a combination of table rice and sake rice to lower the price, along with their immediately recognizable house yeasts (delicate, stonefruit, umami rich), 68% polish rice (which would qualify for premium grade) and unmatched skill. A very moderate use of distilled alcohol gives the sake a silky slip, lightness, and delicate mouthfeel. Much like our favorites Kirinzan Classic and Hakutsuru Toji Kan, there are no corners cut with this affordable futsushu.
