Made with a very unique yeast strain that produces large amounts of malic acid, so the profile is quite tart and juicy like biting into an apple. Unlike other malic acid yeasts (ex. 77) the fermentation is still able to reach >15% so while there is sweetness to balance the acidity, the profile does not read as "sweet."
