A little ferment-y out the gate, very classic wild yamahai and delicious. It has a thick range of spice notes, layers of like... sweet curried spices, caramelized onion, vadouvan... along with a little hint of mango and banana in the background. The whole vibe is tropical food. A bit lighter and fresher than some of our other nama yamahai, more chewy, less chocolatey, lovely lingering tendril-like fingers of flavor. On the drier side too. With food, it chills out a bit: just nice, beautiful ricey goodness-- a bit cleaner. Stands up to big flavors, which lets a clear acidity and minerality come to the fore.

From the importer: "Classic Yamahai here. Earthy, wild, savory, sharp acidity and very flavorful. It does not have the crispness on the finish that the Hojun Karakuchi does. The flavors trend more towards overripe fruit, toffee and smoke. An excellent food sake!"
