Flavor profileEach scale is our tasting-room read on where this bottle sits between two extremes — dry to sweet, light to full-bodied, soft to acidic, and subtle to aromatic. These are subjective, however, and will shift with food, serveware & temp.
Dry
SweetBalanced dry: reads as dry, with a little bit of softness, or maybe a fruit/brown sugar note that tempers the impression of dryness. Most people will read "2" as dry.
Light
FullLight: lean and easy, mellow, has enough flavor and umami to give it character but generally really easy to drink. This is the most common weight for junmai ginjo/ginjo sake.
Soft
AcidicSoft: the most common degree of acidity for sake. A little bit of acidity to give it structure and keep the flavor refreshing, but acidity isn't an important part of its identity.
Subtle
AromaticModerate aroma: noticeable from the glass. Most often, moderate intensity aromas are either ginjo-ka (fruit, florals) or koshu-ka (nuts, mushroom, brown sugar).

Haneya is the flagship brand of the brewery and uses competition junmai daiginjo as the inspiration for all of its products, including this junmai ginjo nama. They perform closely monitored water absorption in small batches, koji rice is managed carefully using small volumes in boxes and futa (small boxes),use only the middle (naka) fraction of the pressing, and source only the highest quality local rice. Because Haneya's sake brewing process is extremely time-consuming, they are unable to expand production and only produce a small number of limited edition products. They've been gaining international acclaim with multiple IWC award wins and a French Kura Master title as well.
