A juicy Yamaguchi-style junmai daiginjo with lots of mouthwatering acidity and a little tiny bit of spritz when freshly opened. The rare prefectural yeast Yamaguchi 9H conveys delicate notes of lychee, honeysuckle and soft, tender Anjou pear. Compared to other Yamaguchi classics (Dassai, Harada, Kitaya) Yuunagi is a touch drier, less concentrated, the spritz lightening the palate, but it's still classic Yamaguchi for having a lovely, velvety core of umami and a gorgeous floral, fruity aromatic profile.

Background:

Yaoshin Brewery's brand name “Gangi” refers to the stepped piers that line the nearby river, and the name is the president's effort to capture the emotion of living waterside. Yaoshin Shuzo brews sake in an honest, straightforward way, performing as little post-processing as possible  (no carbon filtration, no alcohol additions) thus all of their sake is muroka junmai.Â
