Soma no Tengu is creamy, lactic, tart-- with soft ricey sweetness, an intense punch of flavor and a long finish.

This paired beautifully with homemade crab inarizushi from our Not Umami's Cooking popup in April 2023. The sweet vinegary rice with nutty sesame seeds and creamy crab topping served as a perfect foil to Soma no Tengu: like with like.

This is Usunigori sake. 'Usu' means 'thin' in Japanese and this a reference to the very finest part of the sediment from fermentation being retained and added back into the brew at bottling. This technique gives the sake more texture and a flavourful 'ricey-ness' as well as a fine acidic lift on the finish.
